Mirabelle plums are a somewhat forgotten fruit—small, sweet, and yellow—and they’re packed with nutrients. Among them you’ll find not only vitamins, but also beta-carotene, iron, fiber, and magnesium. Their high sugar content makes preserves made from them sweet and almost melt in your mouth! Mirabelles not only support immunity, but also stimulate white blood cells and fight free radicals that accelerate aging processes. It’s worth keeping a few jars of preserve from these valuable fruits in your pantry so you can enjoy them after the season as well. We’ve prepared an amazing recipe for you—an original combination of mirabelle plums with the soothing, sweet aroma of vanilla. You have to try it!

Recipe for vanilla mirabelle plum preserve

Wash and pit the mirabelle plums. Transfer to a pot in layers, sprinkling each layer of fruit with a layer of sugar and vanilla sugar. Set aside for 2–3 hours until the mirabelles release their juice. Then gently cook the fruit over low heat, stirring the preserve from time to time. When the fruit releases a lot of juice, strain it off. Do not discard it; instead, boil it over high heat until it reduces by 1/2. Add the juice back to the fruit and heat over low heat for an hour. Stir constantly. Let the fruit cool, and bring it back to a boil if it’s too runny the next day. Let cool. If the consistency still doesn’t meet your expectations, bring the mixture to a boil again. Transfer the preserve to jars while still hot. Pasteurize for 20 minutes.

Enjoy! ...because homemade is better!
