We are revisiting a recipe prepared by chef Bartłomiej Janicki, whose delicious results we presented during our latest Browin online show. Thank you! This dish isn’t just for vegetarians and vegans—it’s worth making at home because it’s healthy and tastes excellent. It’s also another perfect example that a ham maker works not only for meat dishes. If you haven’t seen it yet, watch the show; if you have, you can refresh your memory by making this appetizing vegan deli loaf for yourself or the family. Highly recommended!

Preparation:

Cut the mushrooms into cubes, then transfer them to a pot or pan and sauté together with the chopped onion in hot oil for about 20 minutes. Cook the groats according to the package instructions. Blend the mushrooms with the chopped beets and the chickpeas drained of brine so that pieces of beet, chickpea, and mushroom remain visible here and there. Add the chopped garlic and spices to the mixture. Add the cooked millet, semolina, flaxseed, and enough water for a fairly firm mixture. Mix everything and season with salt. Place the mixture into the ham maker and cook at about 75⁰C for 1.5 hours. Then let the ham maker cool and place it in the refrigerator for at least 8 hours (preferably overnight).
In the morning, you can enjoy a delicious and healthy vegan deli loaf.
