Recipe for Vegan Panna Cotta with Strawberries
Preparation:
- Warm the soy milk in a saucepan. Just before it boils, slowly sprinkle in the sugar and pectin while whisking vigorously. Bring to a boil and cook for 1–2 minutes, stirring constantly to prevent scorching.
- Remove from the heat and divide the hot mixture evenly between jars (about ⅓ full). Set aside to cool slightly and begin to set.
- Gently heat the hulled, chopped strawberries in a saucepan until they release their juices. Slowly sprinkle in the pectin, stirring constantly. Cook for 1 minute, then add the sugar. Bring back to a boil and keep on low heat for 2–3 minutes, until the sugar dissolves and the mixture thickens slightly.
- Using a spoon, carefully spoon the hot strawberry mixture over the set soy layer in the jars. Leave on the counter to cool completely. Once the dessert reaches room temperature, screw on the lids and refrigerate for at least 3–4 hours (ideally overnight) until perfectly set.
