According to the nutrition pyramid, vegetables and fruit are the most important components of a healthy diet, which in practice means they should make up as much as half of what we eat.

Proportions are important as well — as much as 3/4 of this group should be vegetables. The recipe below is one idea for how we can include them in our diet. 

This recipe will satisfy not only those who want to eat healthier, but also people who completely avoid meat and other animal products. With the right selection of spices, a plant-based pâté also becomes an ideal sandwich spread for children — who don't always care for vegetables on their plate.

How to make a vegan pâté?

Preparation:

Dice the onions and sauté in a pan with 1 tbsp oil and a pinch of sugar. Towards the end, add garlic pressed through a garlic press. 

Transfer the mixture to a bowl, add the remaining ingredients (except the oat flour, breadcrumbs, or rolled oats), season, and blend thoroughly until smooth. 

Add the oat flour and mix thoroughly with a mixer. This is the time to taste the mixture and adjust the seasoning. 

Grease the properly prepared Roman pot with oil and dust it generously with breadcrumbs or rolled oats. Transfer the prepared mixture into the dish. Brush the top with oil; you can also decorate it, e.g., with fresh parsley. Bake the pâté at 170 °C for 40–50 min until browned.


Note: if you're using a Roman pot, remember to place the vessel in a cold oven. Putting it into an already preheated oven may damage it.
