Recipe for a vegetable sandwich spread
Preparation:
Grate the vegetables on a coarse grater, lightly salt them, and set aside for an hour to release their juice. After that, drain off the excess liquid and transfer to a pot. Add garlic pressed through a garlic press. Simmer for about 20 minutes, until the remaining liquid evaporates and the mixture thickens. Remember not to cover the pot with a lid. Stir frequently to prevent the vegetables from burning. Once they soften and thicken, season and add the tomato paste. You can sauté it briefly in a pan. Simmer everything for another 10–15 minutes. Then taste and adjust the seasoning to your liking. While hot, transfer to previously sterilized jars, screw on the lids, and pasteurize for about 15 minutes from the moment the water comes to a boil. Store in a cool pantry or refrigerator all winter.
