Recipe for a warming ginger soup
Preparation:
Peel the carrots, celeriac, leek, potatoes, and ginger, and cut them into small pieces. Season with sweet paprika, turmeric, a pinch of chili, and salt and pepper. Add the seasoned ingredients to the broth or water and cook until tender. Meanwhile, spread the butter in a frying pan and sauté the diced onion in it. Dust it lightly with sugar so it caramelizes a bit but doesn’t burn. Then add it to the simmering soup. Chop the parsley and add it at the end of cooking, just before blending. When the vegetables are soft, blend everything until smooth, adding the sour cream. Taste and adjust seasoning if needed. You can serve the cream soup with croutons and a dollop of sour cream. Best served hot.
