Looking for a refreshing alternative to compotes and store-bought sugary lemonades? Meet water kefir! Despite the name’s nod to dairy, there isn’t a drop of milk in it. This delicious, naturally sparkling fermented drink is easy to make in your own kitchen in just a few days. Water kefir offers all the perks of traditional ferments — it supports a healthy gut microbiome, is 100% lactose-free, and is wonderfully thirst-quenching.

Water Kefir Recipe

Preparation:

First Fermentation

1. Pour 200 ml of boiled water into a sterilized jar and dissolve 1 tablespoon of sugar completely. Once the water has cooled to room temperature, add 1.0 g of kefir culture and stir gently.

2. Cover the jar with clean cheesecloth secured with a rubber band. Leave at room temperature (about 25°C) for 24 hours.

Second Fermentation

3. Pour 1 liter of boiling water over 50 g of dried hibiscus flowers. Let it steep fully and cool completely.

4. In a new sterilized jar, combine 250 ml of the cooled hibiscus infusion with 50 ml of the liquid from the first fermentation.

5. Cover the jar with cheesecloth and leave at room temperature (about 25°C) for 3 days. After this time, the drink will develop its best flavor, a deep ruby color, and a gentle sparkle.

💡 Tip: Water kefir tastes best well chilled. Store it in the fridge in tightly sealed bottles to keep its natural bubbles.
