Learn more about wood chips in our blog post Choose your chips and make some smoke!
If you value healthy cooking and care about what lands on your plate, these natural chips made from high-quality wood are a perfect fit for your kitchen. Sourced in Poland and made from 100% natural wood, they contain no dusty fines or wood-preserving and conserving compounds. This is specially chipped fruitwood that’s perfect for smoking and grilling. Thanks to the chips’ uniform size, it’s easy to maintain a steady temperature as they burn. Smoke from the chips penetrates deep into the food, giving it the right aroma and an appetizing color. Smoking with chips has many advantages, including improved flavor and appearance, increased shelf life through smoke preservation, and reduced product moisture.
Note! When you purchase this set, you’ll receive 3 packs of chips:
- 1 x oak - 600 g, 6-8 mm grade - ideal for beef, poultry, and fish,
- 1 x cherry - 450 g, 9-12 mm grade - ideal for fish, poultry, and red meats,
- 1 x apple - 450 g, 6-8 mm grade - ideal when preparing fish and pork dishes.
How to use:
Grilling: Arrange a 2 cm layer of chips around the glowing charcoal — do not place them directly on the fire, as they will burn up immediately. Cover the grill right after placing the food on the grate.
Grilling time - from 10 to 30 minutes (depending on the size and type of meat).
Delicate meats, such as chicken, don’t need much time. They will be ready after about an hour or two (depending on size). Pork or beef, on the other hand, needs more time.
Smoking is easier if you soak the chips in water or another liquid (e.g., beer), then place them near the fire, preferably in a smoke generator (to prevent them from burning too quickly).
Smoking: Depending on the type of smoker you have, place the chips on the tray designed for this purpose or around the firebox - do not place them directly on the heat source, as they will burn immediately. Depending on temperature, we distinguish the following smoking methods:
Cold smoking at 8 - 25/30℃ causes the most intense drying of smoked goods, requires a long time and greater chip consumption, but the finished products are the most durable and suitable for long maturation.
Warm smoking at 25/30 - 60°C, used mainly for poached and cooked products.
Hot smoking at 40 - 90°C, this method uses warm smoke and, at the end of the process, finishes by baking the meats in the smoker.
Store chips in a cool, dry place.
The smoking chips available in our range have positive assessments from: the Institute of Meat and Fat Industry, the National Institute of Hygiene, and the State Sanitary Institute.
