Preparation
- Place the meat in a bowl and mix with the yogurt, tomato pulp, and spices.
- Add the onion sliced into thin wedges and mix thoroughly.
- Set the meat aside for at least 1 hour to marinate thoroughly.
- Transfer everything to the ham cooker and pack it firmly so no air pockets remain.
- Place the ham cooker in a pot with hot water at 75–85°C and cook until the meat reaches an internal temperature of 72°C.
- Remove the meat from the ham cooker, let it cool, and serve warm or cold.
