This simple, hearty farmer’s cheese–oat loaf studded with seeds is a brilliant choice for a wholesome breakfast, supper, or snack. It’s packed with protein, fiber, and crunchy add-ins, and it needs no yeast or long proofing. Bake it in the oven, on a pizza stone, or on a grill with a lid.
Farmer’s Cheese Bread recipe:
Preparation:
- Place the farmer’s cheese (quark) in a bowl, add the eggs and salt. Blend until smooth, or mash well and mix by hand.
- Add the baking powder, rolled oats, pumpkin seeds, flaxseed, and sunflower seeds. Mix thoroughly until evenly combined.
- Shape the mixture into two long loaves or one larger loaf. Set them on a baking sheet lined with parchment or on a pizza stone.
- Bake at about 180°C for roughly 60 minutes. Let the bread cool before slicing so it cuts cleanly—though it tastes fantastic warm, too!
