This simple, hearty farmer’s cheese–oat loaf studded with seeds is a brilliant choice for a wholesome breakfast, supper, or snack. It’s packed with protein, fiber, and crunchy add-ins, and it needs no yeast or long proofing. Bake it in the oven, on a pizza stone, or on a grill with a lid.

Farmer’s Cheese Bread recipe:

Preparation:

  1. Place the farmer’s cheese (quark) in a bowl, add the eggs and salt. Blend until smooth, or mash well and mix by hand.
  2. Add the baking powder, rolled oats, pumpkin seeds, flaxseed, and sunflower seeds. Mix thoroughly until evenly combined.
  3. Shape the mixture into two long loaves or one larger loaf. Set them on a baking sheet lined with parchment or on a pizza stone.
  4. Bake at about 180°C for roughly 60 minutes. Let the bread cool before slicing so it cuts cleanly—though it tastes fantastic warm, too!
