Cherries are one of the most commonly used fruits for making homemade beverages and yield excellent wines—delicate and sweet. However, they don’t have to be the sole base of the wine—they pair perfectly with gooseberries. Recipe for homemade cherry-gooseberry wine

Preparation:

Wash all the fruit thoroughly, pit the cherries, and crush them together with the gooseberries. Pour over 2 L of lukewarm water, add pectolytic enzyme, and leave in a closed fermentation vessel for 24 hours. After this time, press out the juice and discard the pulp. Add the remaining water, yeast, and the appropriate amount of nutrients to the resulting must. Divide the sugar into 3 portions and add them as follows: on the first day of fermentation, on day 3–4, and on day 7–10 of fermentation. Leave to ferment further for 4–5 months, then age for another 4 months.
