Depending on the ripeness and color of the strawberries, these delicious and aromatic fruits can yield different styles of wine. Dark red ones are perfect for dessert wines, while light-colored, ripe strawberries will let you make light, sweet wines. A strawberry wine recipe is not complicated. However, if you want more refined flavors, a recipe for strawberry wine with the addition of black elderberry juice will be perfect here. This juice has an intense color and a slightly astringent taste, which perfectly balances the sweet fruit juice.
Recipe for homemade strawberry–elderflower wine
Preparation:
Thoroughly wash and rinse the fermentation vessel with Pirosiarczyn turbo or sodium percarbonate – Oxi Turbo. Wash ripe, healthy fruit, dry it, and remove the hulls, then transfer to the fermentation container and gently crush. Add sugar syrup (from 0.5 kg of sugar and 1 L of water), wine yeast, and pectic enzyme. Mix everything and ferment on the pulp for 3 days. After this time, separate the juice and pour it into a demijohn, add the tea infusion, the elderflower infusion prepared the day before in 1 L of hot water, the second portion of sugar syrup (from 1.5 g of sugar and 2 L of water), and yeast nutrient. Fit the demijohn with a bung and airlock. Continue fermentation for at least another 4 weeks. After this time, rack off the sediment again. If necessary, slightly sweeten the batch and continue fermentation. Leave until fermentation is completely finished and the wine has cleared. After three months, the wine is ready to drink.
