Preparation:
While preparing dessert wine from figs and bananas, remember that when using dried fruit, you should first rinse it in warm water. This is extremely important, as it removes from their surface the compounds used for their preservation. Therefore, pour 2.25 L of boiling water over all the dried ingredients, mix thoroughly, and set aside covered for 24 hours. The next day, add cooled sugar syrup (900 g of sugar dissolved in 0.5 L of water), lemon juice and peels, and the remaining ingredients. Leave the mixture for 4 days, stirring twice a day. After this time, strain the liquid, transfer it to a demijohn, top up with water, and fit an airlock. Discard the solids. During the entire process, rack the wine off the lees twice. You can also sweeten it to taste. After about 6 months, bottle the wine.
