Homemade wines are not only drinks made from grapes. Blueberries and delicate lavender flowers also make an ideal pairing. You no longer have to travel to France to get a bunch of lavender—the plant, with its fabulous color and fragrance, increasingly adorns Polish gardens as well. Recipe for homemade lavender-blueberry wine
Preparation:
Wash the fruit thoroughly, gently crush it, and place it in a fermentation demijohn. Scald the raisins with hot water and after a few minutes add them to the demijohn. Steep the lavender in 200 ml of water, let it cool, and then pour it into the demijohn as well. Top up with water and sugar syrup. Add the yeast and nutrient, as well as the acid regulator (a mixture of tartaric, malic, and citric acids). Leave to ferment for 10 days, then press off the pomace and continue fermentation. This is also the time to adjust the flavor (acidify or sweeten). When the wine has cleared, you can start tasting!
