Yeast assimilable nitrogen (YAN) is a fundamental parameter for maintaining normal alcoholic fermentation. The amount of YAN depends on many factors, including fruit variety, soil, cultivation practices, such as, for example, using fertilisers, and climate conditions. The knowledge of YAN content in must allows the winemaker to calculate the appropriate amount of nutrient that needs to be added in order for the fermentation to proceed without problems.
