Recipe for tomato sauce for jars
Preparation:
Peel the carrots and cut them into medium-sized dice. Heat the oil in a pot. Add the carrots and lightly sauté. Add the diced onion to the pot. Sauté until golden. Wash the peppers, remove the cores and seeds, and cut the flesh into cubes. Add the peppers to the pot and wait until they soften. Peel the tomatoes, remove the tough cores, cut into quarters, and add to the sautéed vegetables. Cover the pot with a lid and leave for 15 minutes. After this time the tomatoes should release their juice, and the mixture should start to boil. Let the sauce continue to cook, covered. For the sauce to reach the ideal consistency, this will take at least 2 hours. After this time, stir the sauce and add the garlic pressed through a garlic press, along with all the seasonings, sugar, and oil. Let the sauce cook for another 10 minutes. Taste the sauce and season to your preference if needed. Remove the sauce from the heat and then blend it. If you want to get rid of the seeds in the sauce, in the next step pass it through a food mill. Pour the finished sauce into sterilized jars. Screw the lids on tightly and pasteurize. From the given amounts of vegetables, you will get sauce for about 15 jars of 300 ml each.
