Roasted ham in a net is not only a delicious piece of meat, but also and excellent way of making sure there are no artificial additives involved. Preparing it at home will provide it with excellent flavour, and its characteristic juiciness will steal the hearts of all the enthusiasts of home meat processing.
Preparation:
Prepare a curing brine from 1 litre of water, herbs (Granny Leocadia’s Recipe), crushed garlic and salt. Put the ham into the finished brine and wait for 2 weeks.
After that time, remove the ham from brine, dry it, make rhomboid pattern cuts on it and put it into a meat netting or entwine it with a meat string. Put cloves into the cuts and rub the whole piece of meat with half of the previous prepared marinade consisting of honey and mustard. Put the ham so prepared into a roasting bag and put it into a hot oven.
Roast the ham in the temperature of 170°C for about 1 hour and 40 minutes. Next, remove the ham from the roasting bag and put it into the oven for about 20 minutes. Afterwards, rub it with the remaining portion of the honey-and-mustard marinade until it has a nice colour.
