Recipe for pasta with spinach

If the spinach was frozen, flash off the water from it so that 150 grams of green mass remain in the end. Then blend it well with eggs into a smooth paste. Add salt, oil and spinach mass to the flour, followed by hot water. The order is important here – water added at the end helps control the structure of the dough. Knead the whole mixture until it is smooth and elastic. Then cut the dough into several portions and roll it out (either by hand or with a pasta machine) until you have the thickness desired. Then cut the dough into pasta in the desired width or pattern. Leave for 30 minutes in an airy place to dry slightly. Cook the pasta over a low heat. It will be al dente after just 3-4 minutes. We suggest serving the green pasta with homemade cottage cheese and an onion and bacon gravy.
