You can use it for roasting, grilling or braising – in any of these forms it will be seasoned just the way you like.

Recipe for 1.5-2 kg of roasted pork hock

Wash the pork hocks and, optionally, burn them slightly to remove the hairs. Cut the skin in a few places, along the portioning. Coat the pork hocks in 3 tablespoons of oil, sprinkle them thoroughly with the Pork hock marinade and rub it in. Leave the meat for about 12 hours in a refrigerator, under cover. Remove it from the refrigerator about 30 minutes before roasting. In case of the rear pork hock, you can inject them with brine at a few spots (dissolve half a teaspoon of salt in 50 mL of cold water). Prepare the vegetables – peel them, julienne the carrot and parsnip, cut onion into strips and cut garlic into slices. Put everything into a roasting tin or a Roman pot, add two tablespoons of oil and a glass of water. Put the vegetables on sides and on the pork hock. Cover everything and put it into a lukewarm oven (heated up to about 50°C). We recommend roasting in a temperature of 200°C for 1 hour (with both top and bottom heater on, and with fan assistance).. Then pour beer under the pork hocks and continue roasting for an hour more, reducing the temperature down to 170°C. Afterwards, check if the meat falls off the bones – if so, remove the cover and leave the meat for 30 minutes more to get roasted well.
