Preparation:
- In a large bowl, combine the wheat and rye flours. Add the sourdough mix and salt, then pour in the water. Mix well until everything comes together.
- Turn the dough out onto the counter and knead for a few minutes until smooth and elastic. Shape it into a ball.
- Place the dough in a Roman pot lined with baking parchment. Cover with the lid and leave in a warm place for about 1 hour to rise.
- Once risen, gently dust the top with flour and leave it for a few more minutes.
- Put the pot into an oven preheated to 200°C (top and bottom heat). Bake in two stages: 30 minutes covered, then 30 minutes uncovered to achieve a golden, crisp crust.
- Remove the bread, let it cool slightly, and serve—it's best with a generous layer of butter.
