 A pressure cooker is a tightly sealed pot in which pressure builds up during the cooking of food. This results in a rapid increase in the boiling point of the water and speeds up the cooking process. The bottom of the pot picks up the smallest amount of energy instantly, which is then distributed evenly over its whole surface. Optimising the cooking process in this way saves time and energy, preserves more healthy ingredients in the food and produces more pronounced flavours and aromas. The built-in safety valve and locks prevent accidental opening during cooking.

Professional thermometer: electronic thermometer in a frame, featuring an LCD display and a probe. An electronic thermometer is a device that in indispensable in the distillation process and which thanks to direct, continuous measurement of temperature of the distillate and/or its vapours enables fractionation thereof. Importantly, it enables taking readings with exceptional precision of 0.1° within a wide temperature range, from -50°C to +110°C. The thermometer comes in handy stainless-steel frame that you can install without any problem on any BROWIN still. The device is powered by two LR44 batteries (when buying the thermometer, the first set of batteries is included in the kit).  

Please note! When taking measurements, the cable should not be immersed in the liquid! The 100 cm long probe is compatible with openings with dimensions of at least 6 mm x 21 mm.


Before assembling the kit and starting to use it, read the accompanying manual carefully and follow the instructions, observing the principles of safe use of the product.

PLEASE NOTE! The device can be used by adults only. Never leave a working device unattended. Make sure that the device storage location is properly secured against access of children and unauthorised persons.


ASSEMBLY OF THE SET FOR DISTILLATION PURPOSES

  • Using screws, attach the column with the condenser to the lid of the pressure cooker - in place of the safety valve. Care should be taken not to do this forcibly, as over-tightening the screws may damage the threads.
  • Place the electronic thermometer in the frame and fix it on the condenser stub pipe from which the distillate flows. In order to ensure that the frame on the stub pipe remains in a stable position, cut off approx. 1 cm of the PTFE hose and press it onto the slid frame from below. Next, a silicone hose should be fitted onto the stub pipe to receive the distillate.
  • Place the container on the heating spot and then pour in liquid in an amount not less than 25% of the container's capacity and not more than 90% of it. Mount the lid with the condenser and use the lever for closing.
  • Cut the plasticised PVC hose in such a manner that its length corresponds to the distance of the set from the water connection and drain. Remember that the plasticised PVC hose is to be used for water supply and drainage, while the silicone hose is intended for the distillate. Connect the hoses with the condenser stub pipes - cooling water feeding hose to the lower stub pipe and the cooling water draining hose to the upper one.
  • Place the electronic thermometer in the frame and fix it on the condenser stub pipe from which the distillate flows.
  • Please note! After assembling the kit, before first use, pour about 2 L of water into the pressure cooker and distil it to clean the kit.


HOW TO USE

DISTILLING

  • Switch on the heat supply and set to MAX to quickly increase the temperature of the batch. Heating of 15L of liquid in room temperature takes about 40 minutes. Once the temperature at the top of the column starts rising rapidly, it is necessary to reducer the heat under the pot, which facilitates stabilising the process.
  • The cooling should be activated at the same time, but for safety reasons, already at the temperature of 70-75°C, it is necessary to turn on cold water slightly in order to fill the condensers for easier stabilisation of the process of cooling the distillate received. A short time afterwards, the temperature at the column stop will start rising rapidly and this is when it is necessary to reduce heating in such a manner as to receive distillate in the amount no greater than about 1 L per hour (i.e., 17 mL/minute). The slower the collection, the theoretically stronger and milder the distillate flavour will be (when diluted to around 40%).
  • The process should be started with receiving the so-called heads. It is necessary to receive about 100 mL out of 15 L. This liquid is unsuitable for consumption.
  • The temperature during the proper process will be rising exponentially in relation to the distillate alcohol concentration obtained, which decreases during the simple distillation process.
  • The process should be terminated when the temperature on the thermometer exceeds 92°C, the strength of the distillate drops to about 41% or when the quality of the distillate is no longer satisfactory (organoleptic test - smell and taste).
  • After each finished distillation process, flush the container and wash it with water.
  • Theoretically, 15 litres of ca. 17% batch allows obtaining about 3 L of ca. 65% distillate.


CLEANING AND MAINTENANCE:

Please proceed in line with the recommendations provided in the manual and bear in mind that, although the unit is made of stainless steel, thorough drying after each use will be beneficial in keeping it in optimum condition.
