The material from which the pipe and cork are made have all the required permits for products intended to come in contact with food, Polish Institute of Hygiene certificate.
The fermentation pipe, filled with water, is used in the fermentation process - to protect the content of the cuvée from oxygenation, and at the same time allows regular release of carbon dioxide generated during this process.
A special protective cork prevents the fruit flies from getting into the dish without affecting the fermentation process (special vents have been designed inside the cork).
